The recipe below can be doubled to make about a dozen mini loaves.
Zucchini bread will last for several months in the freezer without losing its moistness. Using fresh, small zucchini will give your bread a nice green color, which is always fun too.
Baking bread has really never been easier. While it may take time to mix the ingredients, zucchini bread is not a hard bread to make. The only problem that might come up is that the bread occasionally does not rise, which may be due to over mixing. To ensure it doesn't happen to your bread, only mix until the ingredients are wet, and never beat the mix with an electric mixer. The mix will be slightly lumpy when poured into pans.

Ingredients You Will Need:
3 eggs
1 cup cooking oil
2 cups sugar
1 teaspoon vanilla
2 cups grated raw zucchini
3 cups flour
1 teaspoon salt
2 ½ tablespoons cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
½ to 1 cup chopped nuts
Beat eggs until foamy. Beat in oil, sugar and vanilla and mix well. Stir in the zucchini and set aside. In a separate bowl, combine the flour, salt, baking soda, baking powder and cinnamon and mix until well blended. Slowly add the flour mixture to the egg mixture. Fold in nuts.
Turn the batter into well-greased pans. Bake for one hour. (Mini loaves may be done sooner). The top generally splits as the bread nears doneness. To check for doneness use the inserted toothpick method. If the toothpick comes out clean, the bread is done.
