Baking Quick Breads

By: Lisa Bower

Quick breads are so named because these sweet, and less commonly savory, breads rely on leavening other than yeast to rise and form. Quick breads can be made using one of the following methods:

Quick Breads Methods

Muffin Method: This involves mixing liquid and dry ingredients separately before combining them and baking.

Creaming Method: Here, the fat (butter, margarine or shortening products) is creamed together with the sugar until light. Following this, other ingredients are then added and the batter is baked.

Quick Mix Method: This involves using a pre-made quick bread mix.

Peach-Orange Nut Quick Bread Recipe

Ingredients You Will Need:
¾ cups of boiling water
5 ounces of diced dried peaches
3 tablespoons of butter
2 tablespoons of orange zest
½ cup of orange juice
1 large egg
1 ½ cups of flour, all-purpose
1 ½ cups of oatmeal
½ cup of white sugar
½ tablespoon of baking soda
½ tablespoon of baking powder
¾ cup of walnuts
Pinch of brown sugar
½ teaspoon of salt
tart by preheating an oven to 350 degrees F, and layer a loaf pan with grease and flour. The oven's rack should be placed in the center.

Next, pour the boiling water in a large bowl, and follow this by adding the peaches and butter. Add the zest, orange juice and egg, and mix until everything is fully blended. Set the liquid ingredients aside.
In a separate bowl, mix together the dry ingredients, and be sure they are fully mixed.

Next, add the dry ingredients to the wet ones, and stir until combined, but don't overmix. Stir slowly with a spatula, and stop as soon as you think the ingredients are combined.

Place the batter into the pan, and bake for 40 minutes or until done.
