Bursting with delicious goodness, blueberries are excellent in desserts and create the best blueberry bread recipes. Some recipes even include zucchini, which keeps the bread so moist, you could call it blueberry dessert bread.
Blueberries or star berries, as the Native Americans called them, have a short growing season. But blueberries are usually plentiful and since blueberries freeze well, there's no reason not to enjoy their sweetness all year long.
Because blueberry bread is sweet, it is not your typical sandwich bread, though it is quite tasty when spread with cream cheese and served for breakfast. For a delightful combination that simply cannot be beat, mix a little cream cheese frosting with real butter and then slather it on thick slices of blueberry bread straight from the oven.
Blueberry Bread Recipe
Ingredients You Will Need:
3 cups bread flour
1 teaspoon cinnamon
1 teaspoon baking soda
¼ teaspoon baking powder
1 teaspoon sea salt (or any non-iodine salt)
1 ½ cups white sugar
1 ½ sticks unsalted butter, melted
3 large eggs
1 teaspoon vanilla extract
2 cups grated zucchini
1 ½ cups fresh blueberries
Topping:
½ cup slivered almonds
½ cup powdered sugar
1 tablespoon milk
Preheat the oven to 350 degrees. Lightly butter one bread pan. Dust with flour, or, for a crispier and sweeter crust, sprinkle the pan with sugar.
In one bowl, sift flour, cinnamon, baking soda, baking powder and salt. Using an electric mixer and a large bowl, whip the sugar and melted butter. Add the eggs, one at a time, mixing well. Add the vanilla and lower the speed. On low speed, gradually add the flour mixture. Remove the electric mixer and add the zucchini, stirring by hand. (When cutting the zucchini, use the peeling and meat of the vegetable, but discard any seeds). To prevent mashing the blueberries, always fold them in last. Pour the batter into the loaf pan and bake for one hour. Check for doneness with a toothpick
To make the topping, simply mix the powdered sugar with the milk, using more or less sugar depending on how thick you want the glaze to be. Drizzle the frosting glaze over the bread both horizontally and vertically to make a type of checkered board on top of the bread. Sprinkle with slivered almonds.
