1 stick butter
1 cup cocoa

1 cup confectioner's sugar

1 tablespoon butter
2 tablespoons confectioner's sugar

Making the Fudgy Brownie Layer
Heat oven to 325 degrees. Melt butter in saucepan on low heat. Add cocoa and evaporated milk and mix while over low heat, stirring continuously for one to two minutes. Stir in sugar, brown sugar and vanilla and cook until sugar dissolves and is no longer granular. Remove from heat and allow mixture to cool for five to ten minutes.

In a separate bowl, combine dry ingredients and mix thoroughly. Beat eggs into warm chocolate mixture. Use a whisk or stick blender for best results. Add in flour, whisking constantly. Pour into brownie pan. Bake for approximately 25 minutes.  A toothpick inserted in center should come clean when the mint brownies are ready.

Let brownie layer cool completely before adding mint filling.

Creating the Mint Filling
Soften butter. Using a stick blender or electric mixer, combine butter, powdered sugar and crème de menthe until filling is smooth and all ingredients are well incorporated. Spread center filling over brownie mixture and set in refrigerator while you prepare the glaze.

Preparing the Chocolate Glaze
In a small saucepan, melt the ounce of baking chocolate and butter over low heat. Whisking continuously, sift and add in the powdered sugar so glaze is smooth and has no lumps. Remove pan from heat and let it sit for three minutes to allow it to cool slightly. Pour glaze over mint brownies, spreading carefully with a knife. Chill brownies for at least 30 minutes before serving.
