Jello Poke Cake Recipe

A traditional jello poke cake recipe is nothing more than a white cake made with flavorful gelatin and topped with your favorite frosting. The cake should be frozen for several hours after baking to allow the jello to set. It's best served cold and is a perfect treat to bring to a child's party or family gatherings.

Jello Poke Cake Recipe

Ingredients You Will Need:
1 package of yellow cake
1 small package of flavored jello (any flavor)
4 eggs
�" cup oil
1 cup water
1 container Cool Whip (can be reduced fat or fat-free)

Prepare your cake following the instructions on the cake recipe. Combine the mixture in a cake pan and cook at 350 degrees for about 40 to 45 minutes. When it has cooled, take a fork and poke holes into the entire cake. In a separate bowl, empty the gelatin powder and combine it with a cup of boiling water. Then carefully pour the gelatin over the surface of the cake. You'll want to refrigerate the cake for three to four hours. Spread whipped topping on the surface.

The beauty of the jello poke cake is that it can incorporate your favorite jello flavors. For instance, if you're a fan of lemon, follow the above recipe, but make sure to include a packet of lemon gelatin and an additional package of lemon pudding mix. You can also substitute the regular yellow cake for lemon cake found in the baking aisle of your local grocery store.

Variations of the Jello Poke Cake
For a strawberry-based variation to the jello poke cake, use a package of white cake mix, strawberry gelatin and frozen strawberries. For a spice cake or carrot cake, pair it with orange gelatin. For white cake, you can try blueberry gelatin and for chocolate cake, cherry gelatin will go perfectly. The whipped topping can also be kicked up a bit with a hint of food coloring. Make sure to stir the food coloring thoroughly to decorate your jello poke cake.
