French macaroons are known for being crispy on the outside and warm on the inside. One main ingredient added to most French macaroon recipes is almonds, but you can also add chocolate.
Recipe for French Macaroons
Ingredients You Will Need:
1 ½ cups sugar
1 ¼ cups slivered almonds
¼ cup potato starch
3 large egg whites (whipped)
1 ½ teaspoons almond extract
Pinch of sea salt
Start by preheating your oven to 325 degrees, and grease a cookie sheet with non-stick spray. Take the sugar and almonds, and combine together in a food processor. Process the mixture for about three minutes or until it resembles a fine powder. Next, combine the starch with the sugar mixture, and process once more.
In a separate bowl, whisk your egg whites, and add the salt and almond extract. Then combine the almond mixture, and set it aside for 20 minutes. Take your greased cookie sheet, and with your tablespoon, scoop out your mixture onto the sheet. Bake the French macaroons for 18 to 20 minutes. Remove from the oven, and place the macaroons onto a cooling rack. Serve and enjoy.
Chocolate French Macaroons
Follow the instructions above to make your French macaroons. Separately, while they are baking in the oven, you'll want to put together a chocolate filling that you can sandwich in between the macaroons. You will need three ounces of fine chocolate, ?" cup heavy cream and 1 tablespoon unsalted butter.
First take your chocolate with cream in a metal bowl set over a pan of barely simmering water or in top of a double boiler. Melt the chocolate and stir, and remember to be careful that the bowl never touches the water. Remove the bowl, and add in the butter. Stir and let cool.
By this time, your macaroons should be finished. Take two macaroons and put a dab of your chocolate filling in between them on the flat sides. Squeeze together to make sure the cookies are stuck in place.
