Recipe for Scottish Macaroon Bars
Ingredients You Will Need:
1 potato (cooked and cold)
3 cups flaked coconut
1 lb confectioners' sugar
One bar of milk chocolate
Take the flaked coconut, and toast in the oven at 350 degrees until it starts to brown. Separately in an electric mixer, beat the potato and add the sugar and combine thoroughly. Take ¾ of the toasted coconut and add to the mixture. Be sure to keep the rest of the coconut on the side.
Next, shape the mixture into one large rectangle. In a separate bowl, melt your milk chocolate. Then coat the top of your rectangle with the melted chocolate. Next, top the bar with the remaining coconut. Cut the rectangle into smaller, individual bars after allowing it to cool. These treats differ from the biscuit-like cookies such as the coconut macaroons. The Scottish macaroon bars can even be filled with raspberry or strawberry filling.
