Royal Custard
Ingredients You Will Need:
4 cinnamon and sugar graham crackers, crushed
2 cups evaporated milk
¼ cup white sugar
1 tablespoon vanilla extract
¼ teaspoon nutmeg
¼ teaspoon cinnamon
4 egg yolks
½ cup raspberry jelly

Topping:
4 egg whites
¼ teaspoon salt
¼ teaspoon cream of tartar
¼ cup white sugar
1 teaspoon vanilla extract

Sprinkle graham crackers in the bottom of the custard cups, and set aside.

Beat together the milk, sugar, vanilla, nutmeg, cinnamon and egg yolks until well blended. Pour the custard into serving-size custard cups. Preheat the oven to 350 degrees Fahrenheit.

Place a rectangular-shaped cake pan on the shelf in the oven and add about two inches of water to the pan. Insert the custard cups, making sure the water does not rise into the custard. Bake for about 45 minutes or until inserted knife comes out clean.

Remove the custard from the oven. Immediately add two teaspoons of jelly to the top of each custard cup, spreading evenly.

Make the meringue topping with an electric beater. Beat the egg whites, salt and cream of tartar together until it begins to stiffen. Slowly add the sugar and vanilla. When the meringue starts to form stiff peaks, it is done. Scoop enough meringue onto the tops of each custard cup to seal the dessert completely. Create peaks by pressing the back of a spoon into the meringue and then pulling up quickly.

Place the custard back in the oven for a few minutes until the peaks toast to a golden brown. This shouldn't take more than 10 minutes. Serve hot or cold.

Variation: Instead of the graham crackers, try chocolate graham crackers or crushed Nilla Wafers.

Banana Cake
Ingredients You Will Need:
2 ½ cups cake flour
1 ½ cups sugar
1 ½ teaspoon baking powder
1 ¼ teaspoon baking soda
1 tablespoon ground cinnamon
½ teaspoon salt
¾ cup shortening
¾ cup milk
1 ½ cups mashed ripe banana
2 eggs, slightly beaten
1 cup walnuts, chopped

Preheat the oven to 350 degrees Fahrenheit. Mix the flour, sugar, baking powder, baking soda, cinnamon and salt together until well blended. Cream in the shortening, and add the milk and banana. When you have mixed the cake well, beat in the eggs, and finally add the chopped walnuts.

Bake for 45 minutes or until the cake springs back when pressed. Do not overbake.
