Quick and Easy Strawberry Trifle

By: Helen Polaski

Think of a strawberry trifle like a strawberry shortcake, only with a little extra. Like a shortcake, a strawberry trifle has layers, only you can see all the different layers because trifle is served in a glass bowl. This trifle recipe is not only tasty, but it is also beautiful.

Strawberry Trifle
Ingredients You Will Need:
4 ounces cream cheese
1 small package instant lemon pudding
1 large container Cool Whip
½ cup strawberry jelly
½ cup raspberry juice
1 sponge cake cut into one-inch cubes
4 kiwi, sliced
2 quarts fresh strawberries, sliced
1 quart small whole berries

Using an electric mixer, beat the cream cheese, the lemon pudding and half the container of Cool Whip until fluffy. Set aside. Spread the jelly on the bottom of the bowl, and then arrange the pieces of sponge cake on top of the jelly. Pour the raspberry juice over the sponge cake, mixing slightly. Make sure some of the jelly gets mixed along with the sponge cake.

At the first layer is in place, begin creating layers by alternating the fresh fruit, Cool Whip and cream cheese filling. The order doesn't matter, as long as you alternate fruit and topping until you reach the top of the bowl, ending with topping. Ideally, trifle should have four to six layers and end with either nuts or berries on top.

As a garnish, use whole strawberries. For an even more tantalizing dessert, dip the strawberries in chocolate, or drizzle the top of the trifle with chocolate ganache or some other thin chocolate icing.
