1 cup brown sugar
2 eggs
½ cup cocoa powder

1 stick margarine
1 teaspoon baking powder
¼ teaspoon salt

Add the margarine and sugar to a medium-sized bowl. Cream these ingredients together. Beat in the eggs and add vanilla extract.

In another bowl, add the cocoa, flour, baking powder and salt. Stir the ingredients together. Gradually add the margarine mixture. Beat until all of the ingredients are fully combined. You should now have a dough-like substance. Allow the dough to chill for an hour.

Preheat your oven to 375 degrees. Take your dough and roll it out on a lightly floured surface (a cookie sheet works well) until it's about ¼ inch thick.

Divide the dough into 2 ¼ x 5-inch pieces using a knife and ruler. Place the pieces on an ungreased baking pan and bake for eight to ten minutes. Allow the cookies to cool.

While the cookies cool, take your ice cream carton and peel the carton away so you can cut out ½ inch pieces of ice cream. Once divided, place the pieces in the freezer.

When the cookies are completely cool, take the ice cream slabs and press the ice cream between the cookies. Trim the excess pieces with a knife. Wrap the cookies and ice cream in foil and allow the ice cream sandwiches to freeze.
