Homemade Ice Cream Bars

By: Lisa Bower

Homemade ice cream bars are a delicious treat for everyone from adults to children. These bars are great for everything from a quick snack on a hot day to serving as the final course of a dinner. Even better, this is one of the easiest and most delicious ice cream desserts a person can make.

Ice Cream Bars Recipe
Ingredients You Will Need:
1 stick of butter
1 cup of white sugar
2 eggs
½ cup of cocoa powder
1 teaspoon of cinnamon
1 cup of smashed-up Heath Bars
2 cups of all-purpose flour
1 teaspoon of baking powder
A pinch of salt
Half gallon of coffee ice cream

Start by preheating the oven to 375 degrees.

Next, mix together the butter and sugar. Add the eggs in one at a time, and follow by mixing in the vanilla extract. Set this bowl aside.

In another bowl, mix together the cocoa, cinnamon, Heath bar pieces, flour, baking powder and salt. Once fully mixed, slowly add this mixture to the butter mixture from before. Beat the mixture until the ingredients are fully combined. Chill the dough for an hour and a half.

Next, roll out the chilled dough on a lightly floured cookie sheet. The dough should be about ¼ inch thick. Now is the time to cut out the rectangular or square pieces for the bars. You can do this by eye, or you can try using a ruler.

Take the cut out pieces of dough, and place them on an ungreased baking pan. You can make patterns on the dough if you want patterns to appear on the ice cream bars. Bake the cookie pieces for 10 minutes and allow to cool.

Next, take ice cream, peel back carton, and cut half-inch-thick blocks of ice cream. You want them to be the size of the cookie pieces. Put the ice cream blocks in the freezer until the cookies have cooled.

Now is the time to combine the components to make the bars. Slap together a block of ice cream between two cookies, and trim the sides with a knife or even a ruler. Allow the bars to freeze for several hours before serving.
