How to Make Chess Pie

When you learn how to make chess pie, you might be surprised that the key ingredient is vinegar. The result of the recipe is a single-crusted, custard-type pie that has many variations.

Chess Pie Recipes
Most recipes for chess pie use cornstarch instead of flour and follow the same basic cooking directions. When making lemon chess pie, make sure you add lemon slices to the top of the pie. For chocolate chess pie, the addition of chocolate chips to the boiling mixture and chocolate curls on the top of the pie work well.

The pie is done if it quivers when slightly shaken. Do not double ingredients, and do not forget to refrigerate pies. Chess pies also freeze well.

Chess Pie (Unbaked)
Ingredients You Will Need:
2 egg yolks, beaten
Pinch of salt
?" cup sugar
3 tablespoons vinegar
1 ½ teaspoons butter
1 cup boiling water
1 heaping tablespoon cornstarch
2 tablespoons cold water
2 teaspoons lemon juice
1 pre-made pie crust

Mix all ingredients. Slowly bring the ingredients to a slow boil. Once the mixture has sufficiently thickened, pour it into a baked pie shell. Use the leftover egg whites to make meringue by beating them with an electric beater and slowly adding sugar, until it forms peaks.

Chess Pie (Baked)
Ingredients You Will Need:
½ cup butter, melted
1 ½ cup white sugar
3 eggs
1 tablespoon vanilla
¼ teaspoon salt
1 tablespoon vinegar
1 pre-made pie crust

In a heavy-bottomed saucepan, simmer butter and sugar, stirring slowly for several minutes. Remove from heat. Cool. Beat eggs, vanilla and salt together and add to the cooled mixture. Add the vinegar last, and mix well. Pour the mixture into a prepared pie shell, and bake at 400 degrees for 10 minutes. Then reduce the heat, and bake for about a half hour at 350 degrees.

Tips for Homemade Chess Pie Crust
If making your own homemade pie crust, make sure you prick the crust all the way around the sides and bottom before placing it into the oven. To prevent the crust from lifting from the bottom, you may need to add weights, such as a second, smaller pie pan. Pie weights, which can be purchased in stores that sell kitchen equipment, are ceramic or metal beads designed to weigh the crust down when baking a pie shell. After use, wash the pie weights, and store them for the next pie-baking session.
