An authentic key lime pie recipe demands fresh key lime juice from Florida key limes. Key lime pies are made of key lime juice, egg yolks and sweetened condensed milk. What makes this pie special is the lime juice. This pale yellow juice gives the pie a distinctive taste. Additionally, the reaction between the condensed milk and the lime juice causes the pie's filling to thicken without any additional assistance.

1 teaspoon Gelatin
½ cup of key lime juice (imitation lime juice is not recommended)
2 egg yolks
2 egg whites
2 teaspoons of sugar
1 can of sweetened condensed milk
A small amount of grated lime

1 teaspoon of cinnamon
How to Make the Best Key Lime Pie
To make the filling, soak the gelatin in the lime juice and allow it to dissolve. Be sure to whisk the gelatin as you combine it with the lime juice so that it does not clump up.
Add a teaspoon of sugar to your yolks and the other teaspoon of sugar to the egg whites. Beat the egg yolks until they are yellow in color. Add the lime juice, gelatin and milk to the yolks and beat thoroughly.
Beat the egg whites until the mixture forms stiff peaks when lifted by a fork or other utensil. Finally, fold the egg whites into the yolk mixture.
How to Make the Graham Cracker Crust
Mix the crust ingredients as thoroughly as you can and then place into a pie pan by pressing the ingredients evenly across the bottom and sides of the pan. Bake the crust at 350 degrees for about ten minutes or until golden in color.
Pour your filling into the graham cracker crust and set in the refrigerator overnight. Make sure that you grate some of the lime rind on the top of the pie before you serve it. This will make it taste and look even better.
