Fruit Vanilla Pudding
Ingredients You Will Need:
½ cup butter
1 tablespoon vanilla extract
1 cup milk
2 cups white flour
1 cup sugar
2 teaspoons baking powder
1 vanilla bean, split
1 ½ cups fresh fruit
1 cup sugar
½ cup water
In a large bowl, cream the butter, vanilla extract and milk together with an electric mixer. Add the flour, sugar and baking powder. Scrape the inside of the vanilla bean into the mix, and toss the pod. Before pouring the mixture into a prepared pan, run the mixer through the batter a second time to make sure the vanilla is well blended.
In a saucepan, bring the fruit, sugar and water to a boil. Remove the fruit sauce from the heat, and pour it over the batter, making sure the batter is evenly covered. Bake for 45 minutes in an oven that has been preheated to 350 degrees Fahrenheit.
Quick Pumpkin Pudding
Ingredients You Will Need:
3 eggs
�" cup honey
1 ¾ cup canned pumpkin
½ teaspoon ginger
½ teaspoon nutmeg
½ teaspoon cinnamon
½ teaspoon salt
1 cup evaporated milk
Beat the eggs in a small bowl, but do not overbeat. Add the honey, and stir until mixed well. Meanwhile, pour the pumpkin into a large bowl, and carefully and lightly sprinkle the spices and salt into the pumpkin, stirring constantly for an even blend. When the spices are all mixed in, add the milk, and stir again. Add the eggs to the pumpkin mixture, and set aside while you prepare a pan.
Evenly coat all sides of a 9- x 9-inch pan. Pour the pumpkin mixture into the pan, being careful not to splash the batter onto the sides. Bake uncovered for about one hour, in an oven that has been preheated to 325 degrees Fahrenheit.
