Because you can cook your rice pudding the night before serving, black rice pudding is actually one of the easiest rice puddings for breakfast fare. Just pour water over the rinsed rice and let it soak overnight-or let it soak for about four hours and then eat it as a midnight snack on cold winter evenings.
Midnight Pudding Recipe
Ingredients You Will Need:
2 cups black rice, soaked and drained
½ teaspoon salt
½ teaspoon cinnamon
2 cups coconut or whole milk
½ cup brown sugar

Use a medium saucepan to cook the rice. Cover with hot water. Add the salt and then bring the rice to a boil. Reduce the heat and simmer for about 20 minutes or until done. Black rice has a nutty flavor-it should almost crunch or pop when you bite into it-and should still be slightly chewy when done. Drain, cover and set aside.
In a separate saucepan, mix the milk, sugar and cinnamon. Scald the milk and immediately pour half of it into the saucepan with the now-drained rice. Cover and let sit for about five to ten minutes. Do not let it sit so long that it cools.
Place one heaping scoop into a bowl and pour about ½ cup of milk into each bowl. Slice the bananas on top of the rice and sprinkle with cinnamon.
Wild Rice Pudding Recipe
Ingredients You Will Need:
1 cup wild rice
3 cups milk
½ cup heavy cream
2 tablespoons butter
¼ cup white sugar
¼ cup brown sugar
2 teaspoon vanilla
¼ teaspoon cinnamon
¼ teaspoon allspice
Garnish: (optional)

Ginger or Cinnamon

Melt the butter into the milk and add the rice. Simmer for about 15 minutes, then place the pan into a double boiler and cook for about 45 minutes, or until the rice is tender enough to eat. Remember that as you're cooking, part of the appeal of wild rice is that it remains a bit chewy-so do not overcook.
When the rice is done, mix the sugar, vanilla and spices with the heavy cream in a large saucepan and slowly add the rice. Some people bake the rice at this point for about 15 minutes at about 325 degrees, but it is okay to continue simmering it until it thickens-just be careful it doesn't burn. You could also bake it in the microwave for about five minutes, to thicken, but microwave heating is not recommended. Uneven spots and the depletion of nutrients when cooked at very high temperatures is enough of a deterrent to avoid the microwave.
When the rice is finished, pour it into a bowl and add milk (or not), depending on your taste preferences. Add a dollop of cream, a scoop of fruit, a teaspoon of sugar or a bit of ginger or cinnamon.
