Asian Shrimp
Ingredients You Will Need:
1 pound fresh shrimp, with tails on
1 pound scallops, cleaned and trimmed
1 green bell pepper, cut into strips or chunks
1 red bell pepper, cut into strips or chunks
½ cup baby corn cobs
1 large onion, cut into rings
1 mandarin orange, juiced
2 tablespoons fresh ginger, minced
1 tablespoon oil (peanut or sunflower works well)
1 tablespoon soy sauce
1 tablespoon olive oil
½ teaspoon garlic
½ teaspoon sea salt
½ teaspoon crushed red pepper
Clean the shrimp and scallops. Cut the scallops in half, or quarter them if they're large. Wash and cut the vegetables. Place the shrimp and scallops in one bowl, and place the vegetables into a separate bowl.
Mix the orange juice, ginger, oil and soy sauce together, and then pour it over the shrimp and scallops. Toss to make sure the seafood is evenly coated.
Meanwhile, mix the olive oil, garlic and sea salt together, and then sprinkle it over the vegetables. Toss the vegetables to make sure they are evenly coated.
Dump the seafood and the vegetables into the grill basket, and place the basket directly on the grill over medium hot coals. Cook for about 15 to 20 minutes, stirring often. Remember that all grills differ. If the heat is too high, vegetables and tender seafood can easily burn, so be attentive. Remove the grill basket from the heat immediately if the vegetables begin to blacken.
Grilled Jumbo Shrimp
Ingredients You Will Need:
12 jumbo shrimp (peeled and parboiled)
1 ½ tablespoons garlic powder
1 ½ tablespoons Caribbean Jerk mix
½ teaspoon sea salt
Lemon wedges
Wash the shrimp and drain. Mix the garlic powder, Caribbean Jerk mix and salt together. Use sandwich bags as gloves, and then rub the spices onto each shrimp. Toss the seasoned shrimp directly onto the grill. Grill for about three or four minutes per side.
Serve with lemon wedges on a bed of rice or as a side dish with marinara sauce.
