Cooking and Serving Grilled Tuna

A properly prepared piece of grilled tuna can be as flavorful and moist as any steak. In fact, tuna is one of the best fish for grilling, and one of the most popular. With a little practice and a few tips, almost anyone can learn how to cook and serve perfect grilled tuna steaks.

Preparation
It's important to start grilling with a clean grill to prevent your tuna from sticking to the metal and falling apart. You want to scrub all the burnt drops from the entire grill, then rinse and dry it well. You also want to start with a clean fish, so make sure to rinse the meat in cold water before cooking, and pat dry with a paper towel.

Make sure any tuna you grill is cut at least one inch thick. Tuna cooks quickly and contains little oil. Thin cuts of tuna dry out and burn quickly on a grill. Use any thin or separated tuna meat for casseroles or salads.

Because of the low oil content in tuna, you want to make sure to use some sort of marinade or oil baste to help seal the juices in the meat. This also helps in preventing the fish from sticking to the grill.

Cooking
You want to grill tuna over heavy, high heat for the best results. Though tuna cooks quickly, it also dries out quickly. Low heat on the grill will leave you with a cardboard steak, not anything that tastes like tuna. The best method is to sear the tuna for two to three minutes on each side, blackening the outside a bit and removing the fish from the grill as soon as the middle is cooked.

Serving
Always serve grilled tuna the moment it's done cooking. Though it can sit and wait for a few minutes, it tastes best hot off the grill. The most popular garnish for fish, but particularly tuna, is a slice of lemon.

Easy Grilled Tuna Steak Recipe
Ingredients You Will Need:
2 tuna steaks (½ lb each, 1-inch thick)
3 tbsp Italian salad dressing

Preheat grill to high or hot.

Rinse tuna as needed, and pat dry. Lightly brush each side of both steaks with the salad dressing. Place steaks on the middle of the grill, and cook for two to three minutes. Brush a little dressing on the upper side of each steak. Flip steaks, and brush dressing across new upper side. Let steaks cook for two minutes. Remove steaks from grill, garnish with a slice of lemon and serve.
