The best tips for grilling fish are easiest to remember when you think safety first. The most important thing to remember when cooking fish on the grill is to make sure it's thoroughly cooked. When raw fish is cooked completely and correctly, bacteria is destroyed.

When grilling fish, the best sauces to use are soy sauce and lemon juice. Tarragon, dill, garlic and fresh ginger are great on fish. Try infusing oil with garlic or ginger for about ten minutes before you marinate the fish. Remove the fish from the oil after about ten minutes and let the excess oil drip off before you place the fish on the grill or pop it into a foil packet.

While most of us enjoy food that has been placed directly onto the grill, it is essential that we look for healthier ways of roasting food on an outdoor grill. To obtain a flat working surface and to ensure the aroma of cedar will enhance the flavor, use a cedar plank when grilling. Use one-inch planks that have not been chemically treated and are large enough to accommodate the fish portions completely. Before using the plank, make sure it has been soaked in water for at least one hour. You want the plank wet so that the hot coals will coerce the water out of the plank in the form of steam. The steam will help keep the fish moist and flaky while cooking.

If you don't have a cedar plank, it's okay to grill your fish on a piece of foil or directly on the grill. Because fish is flaky and is hard to flip once it starts to cook, it's best to grill the fish in some type of basket, in a foil pouch or in a foil pan.

Marinades and Sauces
A good fish marinade might include ingredients such as dry white wine, lemon juice, soy sauce, cooking oil, sugar and spices such as cloves, garlic or ginger. For an added kick, add a little bit of fresh jalapeno pepper or Italian salad dressing to fish filets placed in a foil pan or wrapped to keep the juices from spilling out.
