Making Grilled Pineapple

What would be a better finale to your backyard barbecue than some delectable, sweet grilled pineapple? Grilling pineapple is not as difficult as you might think. You will wow your guests with a sweet and tasty treat that is perfect by itself or as an accompaniment to a heaping scoop of ice cream.

Prep Your Pineapple
Pineapple is one of the easiest fruits to work with on the grill. You can choose to purchase canned pineapple or opt for fresh pineapple. If you are using fresh pineapple, cut off the top, bottom and outer skin of the pineapple with a sharp kitchen knife. Don't forget to core the fruit as the middle flesh can be tough to eat.

You can choose to slice the fruit as pineapple rounds, or cut the pineapple into spears.  If you are slicing the pineapple into spears, cut the pineapple into quarters from top to bottom. Make sure the core is removed from each quarter. Cut each of the quarters into four pieces by slicing two spears lengthwise and then two spears crosswise.

How to Grill Pineapple
Preheat your grill to medium or medium-high heat. If you want your pineapple to grill for a longer period of time, you can use a lower setting. Spray the grill with a non-stick cooking spray or oil so that the pineapple spears do not stick to the grill surface.

Place the pineapple spears onto the grill and cook for about five to eight minutes on each side. Be sure that there are grill marks on each side of the pineapple slices. When you see that the pineapple is beginning to dry, remove the spears from the grill. If you leave the pineapple on for too long, the fruit becomes mushy. Sprinkle a little coarse salt over the pineapple slices before serving to enhance the flavor.

Jazz Up Your Dessert
You can serve your pineapple alone or you can choose to add a little pizzazz to your fruit by trying one of many grilled pineapple recipes. Enhance the sweetness of the pineapple by creating a glaze of honey, lemon or lime juice and ground black pepper. Simply brush the glaze over the pineapple spears before you place them on the grill.

If you want to kick your glaze up a notch, mix together ¾ cup of tequila, ¾ cup brown sugar, 1 ½ teaspoons vanilla extract and a ½ teaspoon of cinnamon until you dissolve all of the sugar. Place your pineapple spears on the grill and baste each spear with the tequila mixture. Grill for approximately ten minutes, turning the spears to grill on each side. Serve over a heaping scoop of vanilla ice cream.
