There's nothing like a delectable dessert of grilled fruit to serve after a lunch or dinner. With so many grilled recipes available to you, the task of finding the best ingredients can seem daunting. Try serving these grilled peaches atop a heaping scoop of sorbet.
Ingredients You Will Need:
4 Freestone peaches, pitted and halved
4 tablespoons fresh or frozen blueberries (thawed and rinsed)
4 teaspoons margarine
4 teaspoons orange juice concentrate
1 teaspoon cinnamon
2 teaspoons chopped walnuts
Wash peaches and place two halves (cut side up) on a piece of foil large enough to wrap it in. Repeat with other three peaches. Place one tablespoon blueberries, one teaspoon margarine, one teaspoon concentrate, one teaspoon cinnamon and 1 ΒΌ teaspoons walnuts in the center of one half of each peach. Close peach halves to form what looks like an uncut peach. Wrap tightly in foil.
Place on grill rack in coolest area of grill. Do not allow to cook over active flame. Allow to cook on grill for about 20 minutes or until soft and tender.
Serve hot with lemon or orange sorbet.
Note: This technique can be used with fresh apricots or very soft fresh pears.
