Popcorn drenched in toffee is a butter lover's delight. It's crunchy, sticky, sweet and salty and rolled up into one scrumptious snack. When making butter toffee popcorn, it's best to use homemade popcorn. This delightful snack is very similar to caramel corn.
Making Popcorn Gifts
If you plan on giving butter toffee popcorn gifts this year for the holidays, use antique tins or thick crinkle-free plastic bags. Tie a ribbon on the package for added glamour and don't forget to make a gift tag. Remember that when gifting a connoisseur foodie, nothing but gourmet toffee popcorn will do, so make sure you add a few nuts to the mix!
Gourmet Butter Toffee Popcorn Recipe
Ingredients You Will Need:
1 cup butter
2 cups light brown sugar
½ cup corn syrup
½ teaspoon salt
½ teaspoon baking soda
1 teaspoon vanilla extract
1 cup whole pecans
1 cup cashews
10 cups home popped popcorn
Pop the popcorn and pour it into a large metal bowl. Preheat the oven to 250 degrees.
Using a heavy-bottomed saucepan, melt the butter. Add the sugar, corn syrup and salt. Mix with a wooden spoon until the sugar has dissolved. Bring the mixture to a boil. Boil for about five minutes without stirring. Remove the mixture from the heat, add the baking soda and vanilla extract and stir to mix. Pour the syrup over the popcorn and mix gently. Spread the toffee popcorn into sheet cake pans and pop them into the oven for about 45 minutes.
For a fun and festive look, add a little food coloring to the toffee. Create a nice holiday look by pouring red or green toffee over the popcorn and then mixing the two colors in the same package or using two separate smaller packages-one green, one red-side by side in a box with a cut out display window. To make extra crunchy butter toffee popcorn, pour the popcorn into foil pans and liberally pour the hot toffee over the popcorn. Once the toffee has been poured, quickly sprinkle whole pecans or a can of deluxe mixed nuts over the top. Place in a preheated oven for about 45 minutes at 250 degrees. Store in airtight containers.
If you're craving some fabulous homemade honeycomb toffee or sponge toffee, you can whip up a batch quickly and easily. This sweet treat is perfect to share with the family or pass out in a holiday gift basket. |
