How to Make a Bellini

If you've ever tried one of these elegant, bubbly cocktails, you're probably hooked for life. Beautiful to look at and delicious to sip, these champagne-based drinks are perfect for brunches, weddings, bridal showers or a girls night out. It's not hard to learn how to make a bellini with so many bellini recipes to choose from. Bellinis are simple to make and impressive to serve.

The Italians had been infusing wine with slices of peaches for centuries, but it was bartender Giuseppi Cipriani of Harry's Bar in Venice who first decided to mix pureed peaches with Italian champagne to make the first peach bellini. Cipriani decided the pretty cocktail reminded him of a sunset painted by Giovanni Bellini, a Venetian artist, so he named the new drink the bellini. 

There are several peach bellini recipes out there and some bars even serve frozen bellinis from bellini makers. You want to try to make the classic bellini to taste the original. You'll need to go shopping for fresh, overripe white peaches, upscale, dry white sparkling wine (Cipriani used Prosecco) or champagne and fluted champagne glasses.

Perfect Peach Bellini
1 ounce peach puree
3 ounces champagne
1 peach slice for garnish

Wash and peel the peaches. Remove the pits and blend peaches into a puree in either a food processor or a blender. Spoon one ounce of peach puree into a fluted champagne glass. Fill the glass with champagne or sparkling white wine. Garnish with a peach slice and serve.

If you cannot find ripe peaches, you can use canned peaches or canned peach puree.

If you don't want to mess with the peach puree, try one of the following recipes for a homemade bellini mix that will thrill your guests:

Frozen Peach Bellini
1 ounce peach schnapps
1 teaspoon fresh lemon juice
2 ounces peach nectar
3 ounces chilled dry sparkling wine or champagne
½ cup crushed iced

Combine ingredients listed in a blender and blend briefly.  Serve immediately with a peach slice in a fluted champagne glass.

Quick and Easy Bellini
1 ounce peach schnapps
3 ounces dry sparkling white wine or champagne
1 dash grenadine

Combine ingredients in a champagne glass for a quick and easy bellini.
