Authentic Indian Curry Recipe

Indian curry is known for its memorable flavors. In fact, traditional Indian curry recipes are known to combine spicy and bitter flavors to make for a completely unique dining experience every time.

Additionally, authentic Indian curry dishes are known to be low in fat. Thus, they are great for people who are trying to limit their fat intake or just want variety in their diet. The ingredients of this cuisine include spices, vegetables, healthy grains and legumes. The following is an authentic Indian curry recipe that is sure to get your juices flowing: It is easy to make, full of flavor and good for you, too.

Madras Coconut Chicken Curry
Ingredients You Will Need:
2 tablespoons of vegetable oil
1 teaspoon of mustard seed
1 teaspoon cinnamon
1 yellow onion, diced
1 teaspoon of ginger, peeled and chopped
4 cloves of garlic, minced
8 skinless chicken thighs
1 teaspoon of peppercorns
3 teaspoons of curry powder
½ pound of squash, peeled and sliced
1 stalk of celery, finely chopped
1 can of coconut milk, unsweetened
½ cup of water

Start by heating up the oil in a saucepan, and follow this by adding in the mustard seeds. Allow the seeds to pop, and then add in the cinnamon. Cook until you can smell the cinnamon, and then add in the onions. Cook until the onion is brown, and then add in the ginger and garlic. Cook for two minutes.

Now you are ready to place the chicken into the pan. Follow this by adding the peppercorns and curry powder. Cook until the mixture is a golden brown, but don't let it burn.

Next, add your vegetables, the coconut milk and water. Boil this mixture, lower the heat and bring to a simmer. Cover the pan and cook for another 35 minutes. You will know the dish is done if the juice is neither too thick nor too thin.
