A Simple Recipe for Fried Rice with Vegetables

If you're looking for a vegetarian recipe for fried rice, you'll find this one is chock full of delicious vegetables. It's easy to prepare and very flavorful. You'll need to complete a couple of the steps ahead of time, so read the directions carefully at least one day ahead of your preparation time.

Recipe for Chinese Fried Rice with Vegetables

Ingredients You Will Need:
3 cups chilled, day old rice
1 cup cubed and cooked carrots

½ diced red bell pepper
1 cup frozen or fresh peas (thawed, if frozen)
1 can bamboo shoots, drained
2 tablespoons peanut oil
3 eggs, beaten
1 teaspoon minced fresh garlic
1 teaspoon minced fresh ginger
1 medium onion, diced
2 tablespoons sherry
2 tablespoons soy sauce
2 tablespoons vegetarian oyster sauce
½ cup cashews

The best fried rice dishes are made with day old, chilled rice. You can make white, brown, or basmati rice-the kind of rice you choose is really up to your taste-according to the directions on the package. Just make sure you make the rice a day ahead of time, then stick it in the refrigerator (covered) overnight so it gets dry.

Prepare your carrots by cubing them, then either steaming them or cooking them in a little bit of water in the microwave.  Drain the water before using in the fried rice. Press them between paper towels to remove excess moisture. Prep the other vegetables ahead of time as directed in the ingredients list, whether that be draining, thawing, or dicing them.

You'll want to prepare the eggs for your fried rice dish ahead of time also.  Beat the eggs while you heat your wok on medium heat. Add a tablespoon of oil to the wok, wait ten seconds for the oil to heat, then pour your egg into the wok, tipping the wok so a thin layer of egg spreads all around the surface of the wok, kind of like a crepe. The egg should cook through in a couple of minutes. You don't need to mix the egg, flip it, or do anything but remove the wok from the heat source as soon as the egg is set. Then you can cut the egg into strips, then cubes, all while the egg is in the wok. Remove the egg pieces and put them aside just before you make your fried rice dish.

Now you are ready to make your egg fried rice with vegetables.

Add your second tablespoon of oil to the wok and heat it until it is smoking hot.  Add your garlic, ginger and minced onions; toss these in the hot oil for one to two minutes, just until the onion is translucent. Add soy sauce, sherry, vegetarian oyster sauce, rice, peas and carrots to wok; toss vigorously for two minutes.  Add red pepper and bamboo shoots; toss for another minute or two.  Add egg strips and cashews, toss again, cover and let cook for a minute. Serve immediately.
