If you like your pad Thai to have a yummy peanut flavor that goes beyond the crushed peanuts sprinkled on top, try making this delicious pad Thai peanut sauce. This is an easy to make sauce that can be used in the wok as you make the pad Thai or as a sauce to garnish a traditional wok full of pad Thai. Use this sauce for dipping for chicken satay as well as a garnish for the pad Thai dish.
Pad Thai Peanut Sauce Recipe
Ingredients You Will Need:
2/3 cup of evaporated milk
1/3 cup creamy peanut butter
2 tablespoons soy sauce
1 tablespoon fish sauce
¼ teaspoon ground ginger
1 tablespoon premade tamarind pulp
¼ teaspoon ground Thai chili pepper
In a food processor, combine all the ingredients listed above. Process well. Use in stir fry dish just before serving (sauce only needs to be heated, not actually cooked, before serving) or add a dollop on top of a plate of pad Thai. Sprinkle with a teaspoon of crushed peanuts and garnish with a sprig of fresh cilantro and a wedge of fresh lime.
If you prefer a simpler, less spicy peanut sauce, eliminate the tamarind (which is sour) and the Thai chili pepper. You can add a sprinkle of cayenne pepper instead for a milder kick that will still deliver the hint of spice that is expected with pad Thai.
If you prefer an even more authentic pad Thai sauce, buy tamarind in blocks. Soak the tamarind in very hot water until soft enough for use. Mix the tamarind with water, either by using your hands or a wooden spoon, until it is mushy.
For a sweeter pad Thai sauce, add a couple tablespoons of granulated white sugar.
