Recipe for Garlic Butter

By: Helen Polaski

Garlic butter is great as a spread on bread or vegetables and especially wonderful on garlic toast. It can be made within minutes and stored for several weeks in the refrigerator. While the following recipe for garlic butter is absolutely delicious when served immediately, it also freezes well. Garlic butter can be molded into round logs, frozen and cut into tasty butter pats.

For an out-of-this world taste, make your own garlic bread. Cut the loaf of French bread into diagonal wedges that are about one inch thick. Spread homemade garlic butter onto the thick slices, being careful to spread the garlic butter on both sides of the bread. Carefully layer the garlic bread into freezer bags and freeze.

Garlic Butter Recipe

Ingredients You Will Need:
1 cup butter (softened)
1 tablespoon garlic (minced)
¼ cup Parmesan cheese (grated)
1 teaspoon garlic powder
¼ teaspoon thyme
¼ teaspoon oregano
¼ teaspoon basil
Dash of black pepper
Dash of salt
¼ teaspoon ground paprika

Using a deep bowl, combine softened butter, garlic and Parmesan cheese. Mix thoroughly with a rubber spatula. In a measuring cup, mix the garlic powder, thyme, oregano, basil, black pepper, salt and paprika. Dump all of the spices into the butter and mix thoroughly until smooth.

You can mold the butter into a round log at this time. Make a log by lying plastic wrap on the table, placing the butter into the center (forming a thick, ten inch log) and rolling the plastic up around the butter log. If desired (after the butter hardens), open the plastic wrap and either sprinkle spices over the log or roll the log in a paper plate that has been sprinkled with extra spices.

Play Around With the Recipe
To eliminate some of the unpleasant garlic breath odor, try using less garlic powder. For a less salty butter, eliminate the salt. For a saltier butter, try ½ teaspoon Lawry's Seasoning Salt in place of the ¼ teaspoon salt. For a more potent butter, use the same ingredients but only half the butter.

Garlic butter recipes are excellent when used with mashed potatoes, bread and rolls and vegetables such as corn on the cob and steamed carrots. Don't forget to add a heaping butter pat onto a juicy steak.

Making homemade butter is an easy process. All homemade butter takes is a little cream, a little patience and a little muscle. The raw cream that rises to the top of fresh cow's or goat's milk is skimmed from the top and stored in its own container. The richness of the cream is the result of the butterfat content in the animal's diet and, of course, what helps butter pass richness on to baked goods and sauces.
