Sweet and Sour Apple Salsa Recipe
Ingredients You Will Need:
2 Granny Smith apples, chopped
2 Fuji apples, chopped
½ cup toasted pecans, chopped
1 small Vidalia onion, minced
2 tbsp lemon juice
1 cup golden raisins
2 tbsp fresh Chives
2 tbsp fresh mint leaves
2 tbsp clover honey
The apples can be peeled, but leaving the red and green peels on gives the salsa more color. The choice is yours.
Chop the apples and pecans, then mince the onion and mix these ingredients together in a large bowl. Pour the lemon over the apples, and toss gently to coat all pieces. The lemon will add a nice zing to the mix and will help keep the apples from browning.
Pour boiling water over the raisins. Leave the raisins in the water for about five minutes. Once they plump up, drain them on paper towels. Add the raisins to the apples, and toss well.
Wash the mint and chives, and chop coarsely together. Add the honey to the mint and chives, and mix.
This recipe is best if eaten immediately. If you plan on serving this apple salsa at a later date, make sure it is placed in an airtight container and eaten within two days. To prevent browning, add a few additional drops of lemon to the apples. Then, before refrigerating, toss the salsa well to make sure all pieces are coated with citrus juice.
