Making Honey Mustard

When making honey mustard, you won't get the right results unless you have the right base. Therefore, you should prepare your own mustard, and then add the flavors that will transform regular mustard into honey mustard.

Honey Mustard Sauce
Ingredients You Will Need:
¼ teaspoon oregano
¼ teaspoon thyme
¼ teaspoon ground pepper
¼ cup vinegar
½ cup molasses
½ cup honey
1 cup prepared mustard (see recipe below)
½ teaspoon olive oil

Mix the dry ingredients in a saucepan. Add half the vinegar, and stir. Stir in the remaining vinegar and then all of the wet ingredients, stirring well after each.

Prepared Mustard
Ingredients You Will Need:
3 ounces mustard seeds (darker will be bolder)
¼ cup brown sugar
½ teaspoon salt
½ teaspoon cracked pepper
1 teaspoon turmeric
¾ cup water

To soften the mustard seeds, soak them in cold water overnight. This will not only soften the shells, but it will also give the liquid a chance to be absorbed. For a more robust sauce, soak the seeds in vinegar, wine or beer.

If you want hotter mustard, using the bold dark seeds is just the first step in a two-step process. The second step is to make sure the water is cold and not hot or heated when the seeds are soaked. Hot water will neutralize the punch of the mustard seed. In the morning, use a coffee grinder to grind up the mustard seeds. Then add the remaining ingredients to the mix, and stir until smooth.
