Roasted Vegetables

There is nothing like a delicious side dish of grill or oven roasted vegetables with a grilled or baked chicken dish. Try roasting vegetables with a variety of color to jazz up your plate and make the presentation that much more interesting.

Ingredients You Will Need:
6 green, yellow or red peppers
3 Vidalia onions
6 Yukon Gold potatoes
4 zucchinis
4 tablespoons olive oil

To prepare the grilled veggies, rough cut the peppers, Vidalia onions, Yukon Gold potatoes and zucchinis. Toss with olive oil and place in a grilling basket or foil packet. Cook on the grill for about 30 to 40 minutes until tender. It is best to add the veggies on the grill after the chicken so they finish at the same time.
