Once all ingredients are in place, the rest is as simple as anyone can make it. Simply scoop one or two tablespoons of peanut butter into a bowl, and add some low sodium soy sauce into it. Usually one tablespoon of soy sauce is enough, but you can add a little more or less to fit your own taste. Put the bowl into a microwave and heat it for about 45 seconds to a minute. The heating process is important for two purposes. One is to help soften the peanut butter so that it is easily mixed with the other ingredients. The second purpose of this microwave heating is to make the soy sauce hot enough so that when minced garlic, cilantro and sugar (and any other optional ingredients you may want to add) are added to the bowl, the heat will bring out their natural fragrance, making the sauce much more flavorful. Do not wait until the other ingredients are added before heating, since the microwaving process will destroy almost all essential health benefits in garlic and other herbs.
Take out the bowl from the microwave and immediately add about 1 tablespoon of minced garlic, 2 tablespoons of chopped cilantro and about 1 tablespoon of sugar or sugar substitute. You may also want to be creative and add in any combination of the optional ingredients. The ginger will make the dressing crisper in taste and the spicy nature of the dried chili pepper flakes and the white pepper powder will further enhance the sensitivity of your tongue. Even if you cannot take very spicy food, adding in 3 or 4 flakes of the dried chili and a dash or two of the white pepper powder won't upset your senses and will contribute to the overall taste of the dressing. After all the dry ingredients are added to the bowl, add in about 2 tablespoons of the vinegar and if you want an even richer taste, add 1 teaspoon of sesame oil, some honey and a little bit of chicken base to the mixture as well.
Now all that's left to do is to mix everything together. Take the time to really mix well because this step allows for the combination of all flavors in the dressing so that end result will be bold in taste and smooth and creamy in texture. When you have reached your desired consistency, pour it over your bed of greens and enjoy. You will be so proud of your creation!
