Steak With Curry Butter
Ingredients You Will Need:
Steaks:
4 Steaks, filet, 1-inch thick
White pepper
1 Lemon grass, stalk, chopped
1 1-inch piece of Ginger root, thinly sliced
20 Peppercorns, black, crushed
Curry Butter:
1/4 pound butter, unsalted
2 ginger root, thinly sliced
1 large shallot, chopped
1 sm garlic, clove, chopped
1 sm chili, green, seeded and chopped
1 tablespoon Garam Masala
1 tablespoon curry powder
1 tablespoon lemon juice
1 pinch ground turmeric
salt and pepper, to taste
Remove the steaks from your refrigerator at least 1 hour before cooking, and let them reach room temperature. Press a generous amount of white pepper into the surfaces of the steaks. Cover. Place the lemon grass and water in the bottom of a steamer with ginger and peppercorns. Boil 1 to 2 minutes to release the oils and flavors. When you are ready to cook the meat, salt the steaks and steam them over vigorously boiling liquid for 3 minutes. Finish frying the steaks in a pan. Then blend all of the ingredients in a food processor until smooth. Dot the steaks with the curry butter, and serve.
