Bruschetta with Artichoke Hearts

The perfect addition to a traditional tomato-based Italian bruschetta is artichoke hearts. The best way to add this into the recipe is to get a can of artichokes, drain them and chop them into small pieces. This easy bruschetta appetizer will have friends begging for the recipe to serve at their next party.

Recipe for Bruschetta With Artichoke
Ingredients You Will Need:
1 loaf of Italian bread
1 large fresh tomato, chopped
1 cup canned artichoke hearts, chopped
2 tablespoons extra virgin olive oil
½ teaspoon ground black pepper
Pinch salt
1 fresh basil leaf, chopped
¼ cup onion, chopped
3 cloves garlic, pressed

You're going to want to start by turning on the broiler. Then, on a cutting board, slice the Italian bread in thin slices. Arrange the slices on a baking sheet, and broil on both sides for about 10 minutes. In a medium bowl, combine the tomato, artichokes, olive oil, pepper, salt, basil, onion and garlic. Mix thoroughly, and let refrigerate for about 10 minutes.

Then scoop the mixture onto the toasted pieces of bread. Be sure to drizzle any extra olive oil from the bowl onto the bruschetta. You can also toss a pinch of Parmesan cheese on top before serving.

Variations
Some artichoke bruschetta recipes call for a few tablespoons of mayonnaise. The mayonnaise helps the mixture thicken, and it'll be easier to spread onto your toasted bread. You can also try some fresh goat cheese or a handful of chopped olives for flavor. You can top this version off with some pine nuts.
