By: Kristen Oliveri

Make bruschetta with cheese for a creamy twist on the tomato-based version. This easy cheddar bruschetta recipe includes mayonnaise for a thicker consistency. Try experimenting with other types of vegetables such as zucchini, or even eggplant, to add into the cheddar bruschetta.

Recipe for Bruschetta With Cheddar
Ingredients You Will Need:
French bread loaf
2 medium tomatoes, chopped
" cup cheddar cheese, shredded
" cup mayonnaise (could be fat-free)
¼ cup parmesan cheese, grated
1 teaspoon dried oregano
½ teaspoon basil, chopped
½ teaspoon garlic salt
Pinch salt
Pinch ground black pepper

Start by cutting your French bread into diagonal pieces. Toast the slices in the oven, 2 minutes on each side. Then combine all the remaining ingredients in a medium bowl. Mix thoroughly, and refrigerate for about 10 minutes. Scoop the mixture onto your toasted French bread slices, and it's ready to be served.
