Making Chicken Bruschetta

Try creating this delicious chicken bruschetta recipe if you're looking for an appetizer that can also double as a main course. Use fresh, thinly cut chicken breasts for the best results. Certain types of cheese, like a sprinkle of parmesan or small chunks of mozzarella also work well as a creamy topper to this treat.

Chicken Bruschetta Recipe

Ingredients You Will Need:
6 pieces chicken breast, thinly sliced
1 tablespoon olive oil
2 cloves garlic, minced
3 plum tomatoes, chopped into small pieces
¼ cup onions, chopped
½ cup basil, finely chopped
Pinch of salt
Pinch of black pepper
Pinch of garlic salt
1 tablespoon lemon juice
¼ cup parmesan cheese, grated

Sprinkle a little salt, pepper and garlic salt on the uncooked chicken. Grill the chicken on both sides in a little olive oil in a non-stick pan. Cook for about 10 to 12 minutes or until the chicken is cooked thoroughly. Set the chicken aside.

Combine your tomatoes, olive oil, garlic, onions, basil, lemon juice, salt and pepper in a medium bowl. Mix together and refrigerate for about ten minutes. Lay your pieces of grilled chicken on a plate and top with the tomato mixture. Sprinkle with parmesan cheese and it's ready to be served.

Creating a Chicken Bruschetta Appetizer
This recipe can easily be made into an appetizer as well. Instead of keeping the grilled chicken whole, chop the chicken into small pieces and mix into the tomato mixture.

Take Italian bread and slice it thinly on a diagonal. Toast the bread in the oven for about ten minutes and top the slices of bread with the chicken and tomato mixture for a perfect appetizer.
