Making Mexican Lasagna

If you like flavorful Mexican food, you'll love a twist on an Italian classic: Mexican lasagna. The recipe calls for many of the same ingredients included in tacos, burritos or quesadillas. The only trick is to sandwich those beans, corn, meats and seasonings into the lasagna noodles. This is a perfect meal to serve for a group at a dinner party. You can pair it with a large pitcher of red wine sangria or margaritas.

Mexican Lasagna Recipe

Ingredients You Will Need:
Lasagna noodles (can be no-bake)
3 tablespoons extra virgin olive oil
2 pounds of either ground beef or ground chicken
1 tablespoon chili powder
2 teaspoons ground cumin
½ red onion, chopped
1 can black beans, drained
1 can fire roasted tomatoes
Salt, pepper to taste
1 cup frozen corn kernels
2 ½ cups shredded Cheddar cheese
2 scallions, chopped

Preheat the oven to 425 degrees. Put your olive oil into a saucepan over medium heat. Drop in the chicken or ground beef, salt, pepper, cumin, chili powder and red onion. Cook for about five minutes and then stir in the tomatoes, black beans and corn.

In your baking dish, throw some extra virgin olive oil into the bottom of the dish to coat. It's time to prepare the lasagna pan. Cook your lasagna noodles according to the package or simply layer the first no-bake noodles. Add a layer of the meat or chicken mixture and top it with a sprinkle of cheddar cheese. Repeat for the rest of the layers. When you reach the top of the lasagna, drizzle a little more olive oil and one more layer of the cheese. Bake for about 15 minutes. Let cool for another ten minutes or so. Top it off with the scallions and serve.

This easy Mexican lasagna recipe is a lot like actual Mexican dishes. If you like peppers, more spices or a different meat, be sure to add them into the dish. You could also try topping a slice of lasagna with a dollop of sour cream or salsa.
