Simple Chicken Panini Recipes

It's hard to find a café or sandwich shop these days that does not serve paninis. These pressed Italian sandwiches can be stuffed with just about anything and made with just about any bread. Applying pressure to the outside while you cook them creates a crispy exterior, and a warm, gooey interior.

Walk into any department store, and you are more than likely to find a panini press or two. Usually they are seriously overpriced, and rarely do they work the way you want them to. Instead, you can create your own makeshift panini press using items lying around your kitchen. When making a panini on a grill pan, simply top it with another wide-bottomed pan, and drop a few cans of beans or soup on top. The weight will gently yet firmly press the panini to crispy perfection, without costing you an arm and a leg.

Pesto Chicken Panini
Ingredients You Will Need:
1 big loaf focaccia bread
1 cup pesto, preferably homemade
1 ball fresh mozzarella, cut into chunks
2 cups cooked chicken meat, cut into bite-size pieces
2 tablespoons olive oil

Cut the focaccia in half horizontally, and spread the pesto evenly on the top half. Spread the mozzarella evenly along the bottom half, and top it with the chicken. Put the two halves together, and rub the top with one tablespoon of the olive oil. Heat your grill pan over medium-high heat, and put the sandwich on, top side down. Top with another pan full of canned goods, and cook for about five minutes, or until the bread is toasted and grill marks have formed. Rub the side that hasn't toasted yet with the rest of the olive oil, flip it over and replace the pan. Toast another five minutes, take off the heat and cut into individual paninis.

Chicken and Herbed Goat Cheese Panini
Ingredients You Will Need:
2 tablespoons each basil, parsley and chives, finely chopped
1 cup goat cheese
4 slices pita bread
1 tomato, thinly sliced
1 onion, thinly sliced and caramelized
2 cups cooked chicken meat, cut into bite-size pieces
4 tablespoons olive oil

Mix the herbs with the goat cheese, and spread evenly on two of the slices of pita bread. Next, evenly spread the tomatoes, onions and chicken. Top with the other slices of pita bread, and rub the tops with olive oil. Toast for three to five minutes on each side over a grill pan set to medium-high heat, with pans full of canned goods on top of them. Rub the other side with olive oil before you flip them. When they are toasted on both sides, cut into individual slices, and enjoy.

Chicken Caesar Panini
Ingredients You Will Need:
2 cups shredded Bibb or iceberg lettuce
¼ cup of your favorite Caesar salad dressing
2 cups cooked chicken meat
¼ cup freshly grated parmesan cheese
4 slices pita bread
4 tablespoons olive oil

Toss the lettuce with the salad dressing, and evenly spread the salad across two of the pita slices. Put the chicken on the lettuce, and cover with the cheese. Top with the other pita slice, and rub the tops with olive oil. Toast for three to five minutes on each side over a grill pan set to medium-high heat, with pans full of canned goods on top of them. Rub the other side with olive oil before you flip them. When they are toasted on both sides, cut into individual slices, and serve.
