Even though it takes a bit of time, pasta is a simple and incredibly rewarding thing to make. While it doesn't take a culinary genius to make homemade pasta by hand, since it requires a number of steps, many people opt for grabbing a box off the supermarket shelves. They're missing out on a very rewarding experience.
What you will need to make homemade pasta by hand
6 cups of all purpose flour
3/4 teaspoon of extra-virgin olive oil
6 extra-large eggs
A pizza cutter or sharp knife
A large, flat work surface
A fork
Step-by-step directions
Begin by clearing off and cleaning your work surface. Pour five cups of the flour onto the surface to make a hill shape, then make a well-like hole in the mound. Crack the eggs and the oil into the mound. Whisk the eggs with a fork and gradually bring in more and more flour from the sides until the mass is something you can knead. Flour your hands and knead the dough, re-flouring the work surface as needed. Do this until the dough no longer sticks to the work surface.
Set the dough aside and clear the work surface again. You do not need to wash the work area, but you should scrape it to get rid off any unevenness created by stuck dough. Lightly re-flour the surface and once again knead the dough until it's smooth and has an elastic feel. Form a dough ball, making sure it's well floured, and cover it with plastic. Set the dough aside at room temperature for about 30 minutes. While the dough is sitting, clean your work surface completely. Flour it lightly again.
Take half the dough and roll it out. You will need to flip it over a few times during the rolling out process to make sure it doesn't stick. Keep rolling until you get the dough as thin as you can, and when you think you can't possibly roll any more, keep going. It should be thin enough that you can vaguely see something like a book cover through it. Once the dough has been completely rolled out, you can cut it into strips of any size.
After you've cut the pasta, you can loosely dust it with flower and crumple to the side while you repeat the process with the leftover half of the dough. At this point, your homemade pasta is ready to be cooked. Keep in mind that unlike dry store-bought pasta, yours will need only a couple minutes of cooking.
