Classic Cheese Ravioli Recipes

For some of the best ravioli recipes, look no further than ravioli filled with several cheeses. Ricotta cheese is a good base because it is so creamy, and its flavor blends well with the flavors of other cheeses. You can combine it with parmigiano-reggiano, provolone, mascarpone and mozzarella, to name a few.

Classic Cheese Ravioli With Spinach Pasta
Spinach Pasta
Ingredients You Will Need:
1 �" cups white flour
8 ounce frozen spinach (thawed)
2 eggs
1 tablespoon olive oil
½ teaspoon salt

Filling
Ingredients You Will Need:
1 cup ricotta cheese
1 cup mozzarella cheese
2 ounces freshly grated Parmesan cheese
2 eggs, lightly beaten
½ teaspoon nutmeg

Pour the flour into a food processor, and set aside. Cook the spinach so that it thaws and becomes limp. Drain the spinach, dry it and add it to the food processor. Add the eggs, olive oil and salt, and chop the mixture until it forms a pasty dough. Remove the dough from the food processor, and wrap it in plastic wrap while you make the filling.

Use a mallet to beat the cheeses until they begin to blend together. Mix in the egg, nutmeg and a little pepper to taste, and stir until the mixture forms a thick paste. Set the mixture aside while you knead the dough.

Knead the dough for at least 7 minutes. Use enough additional flour to knead the dough until it forms a good stiff dough. Roll the dough out with a rolling pin until it reaches a thickness of about ⅛ inch. Use a ravioli cutter, a small plastic cup or a design of your choice to cut the dough into pieces. Add one teaspoon of filling or more, depending on the size of the cut pasta, and either cover it with a second piece of pasta or fold the pasta over the filling. Pinch the edges together to form a seal. Boil in a boiling water bath for 4 minutes. Drain and place on a plate. Sprinkle fresh chopped spinach leaves and cheese over the ravioli, and enjoy.

When you are shy on authentic ingredients but still have a craving for the wonderful, creamy taste of cheese ravioli, use what you have on hand. A cup of flour, 2 eggs and ½ teaspoon of salt, and you have enough for the pasta. Dig a little deeper in the fridge, and you'll find you almost always have what you need.

Cheese Ravioli With Leftovers
Ingredients You Will Need:
2 to 4 slices American cheese
1 cup shredded Colby or mozzarella cheese
½ cup cottage cheese
2 green onions or ¼ cup chopped onion
1 tablespoon olive oil
2 tablespoons tomato sauce, pizza sauce or spaghetti sauce
2 cloves garlic, crushed, or 1 tablespoon powdered
1 tablespoon parsley
½ teaspoon salt
½ teaspoon pepper

Mix the ingredients in a food processor until you have coarse crumbles. Make the pasta and filling as directed above.
