Green Tea Cod

Combination of vegetables, natural herbs, low fat and affordable Cod fish really take on a new take when dealing with Cod.  Cod is the typical fish stick meat, fishy and not quite the first choice when dealing with fish.  Often times, it is forgotten how juicy and tender this white fleshed fish truly can be without being submerged in hot fat.

With such a delicate flavor, using other delicate ingredients seems to be ideal to use when cooking with Cod. For instance, in this recipe Green Tea and lemon suffice in creating delicious and a surprisingly satisfying meal which is both healthy and simple to cook.

Here are the ingredients (feeds 6 people):

  • 6 cod filets
  • 1 lemon (zested and squeezed)
  • 1 cup white wine
  • 1 single Green Tea packet
  • Salt and White Pepper
  • 1 orange (zested and squeezed)
  • 6 sprigs of Thyme
  • 1 red onion (sliced thin)
  • Baby carrots (sliced on a bias)
  • Roma Tomato (sliced about ¼ inch thick)
  • Spinach (1 bag or 1 pound)
  • 3 Cloves of Garlic

Directions:

  1. Make a marinade for Cod filets in a small bowl. Combine lemon and orange Zest, lemon and orange juice, garlic (minced), salt and pepper, contents of Green Tea packet. Mix together.
  2. Lay cod filets out on a pan and rub marinade into each filet. Be sure to coat both sides of all Cod filets.
  3. Top each filet with red onion slices, tomato slices, and a sprinkle of white wine.
  4. Let marinade at least 45 minutes.
  5. While marinating, prepare baby carrot slices and parchment paper. Cut 6 square sheets of parchment paper that when folded in half will fit one filet each.
  6. Preheat oven to 350 degrees F.
  7. Place one filet in each piece of parchment paper, along with a portion of carrots, a handful of spinach, a splash of white wine, and one sprig of thyme. Fold in half and seal by rolling the edges together. Beginning on one side that is opposite the fold, leaf in ¼ inch of paper and fold. Then, the next fold will begin from the bottom 1/3 of the last fold made. Continue this pattern until completely closed and sealed shut. Some may prefer to staple before cooking.
  8. Place in oven and cook for 30 minutes. Remove and serve as is.
