Low Fat Chicken Casserole Recipe
Ingredients You Will Need:
½ pound chicken, cooked, torn or cubed
1 can 98% fat free cream of chicken soup
1 cup skim milk
1 can drained green beans
1 cup broccoli florets, cut into small pieces
½ teaspoon salt
¼ teaspoon pepper
⅛ teaspoon cayenne pepper
1 medium onion, diced
1 tablespoon olive oil
½ cup bread crumbs
You can use leftover chicken from another meal for this casserole; just make sure you've removed all the skin, fat and bones from it first. If you don't have any leftover chicken to use, purchase pre-cooked chicken breasts or bake a few seasoned chicken breasts in the oven for 30 minutes. Tear or cut the chicken breast (white meat is lower fat, so use white meat only) into bite-sized pieces. Place chicken in a baking dish.
Add can of cream of chicken soup and milk. Mix in green beans and broccoli florets. Stir in salt and both kinds of pepper.
In a skillet, bring tablespoon of olive oil to sizzling hot temperature. Sauté onion for three to four minutes. Add bread crumbs and mix into oil and onion; spread bread crumb and onion mixture on top of casserole. Place in oven and bake at 359 degrees for 30 minutes or until top is browned and interior is bubbling hot. Let cool for 15 minutes; serve.
Low Fat Tuna Casserole Recipe
Ingredients You Will Need:
1 can tuna, packed in water, drained
1 can 98% fat free cream of mushroom soup
1 can peas, drained
1 cup carrots, peeled and sliced into very thin coins
1 teaspoon salt
½ teaspoon ground black pepper
1 tablespoon olive oil
1 medium onion, diced
½ cup bread crumbs
Preheat oven to 350 degrees.
Combine tuna, cream of mushroom soup, peas and carrots in a baking dish. Add salt and pepper and mix until well-combined.
In a skillet, bring tablespoon of olive oil to sizzling hot temperature. Sauté onion for three to four minutes. Add bread crumbs and mix into oil and onion; spread bread crumb and onion mixture on top of casserole. Place in oven and bake at 359 degrees for 30 minutes or until top is browned and interior is bubbling hot. Let cool for 15 minutes; serve.
