Basic Boiled Chicken
Ingredients You Will Need:
4 chicken breast fillets, thawed
2 cups chicken stock
1 ½ cups water

Place the chicken breast fillets, stock and water in a saucepan. Bring to a boil, and then reduce heat, simmering for 10 minutes. Once the chicken has cooled, you can slice it for sandwiches or cube it for soup or salads.

Tasty Chicken Sandwich
Ingredients You Will Need:
2 slices whole grain bread
1 tablespoon Dijon mustard
1 tablespoon fat-free mayonnaise
4 ounces sliced chicken
½ cup alfalfa sprouts
2 slices romaine lettuce
2 tomato slices

Spread the mustard and mayonnaise over both pieces of whole grain bread. Layer the chicken on top of one of the pieces of bread and arrange the sprouts, lettuce and tomato slices over the chicken. Put the remaining piece of bread over the vegetables.

Spicy Chicken Fajitas
Ingredients You Will Need:
1 teaspoon olive oil
1 red bell pepper
½ large yellow onion
2 cloves of garlic
1 tomato
¼ cup of diced jalapenos, seeds and stems removed (Handle carefully!)
2 cooked chicken breasts, shredded
8 corn tortillas

Distribute the olive oil in a skillet, and set on medium-low heat. While the pan is heating up, dice the red bell pepper and onion. Add the pepper and onion to the skillet, and sauté until the onions are translucent and the peppers are soft. Mince the garlic cloves, and add them to the pan. Dice the tomato, and add it in along with the jalapenos. Mix the vegetables thoroughly, and add the chicken after five minutes of cooking. Cook until the vegetables are soft and the chicken is warmed throughout. Scoop the chicken mixture onto warm corn tortillas. You can use fat-free sour cream as garnish.
