
When you think of dessert, you may think high-calorie and high-fat foods, but plenty of low fat dessert recipes are available that are delicious and satisfying. Check out the following low fat dessert recipes the next time you've craving something sweet.
Low Fat Berries and Cream
Ingredients You Will Need:
½ cup fresh raspberries
½ cup fresh blackberries
½ cup fresh blueberries
½ cup fresh strawberries
½ cup fat-free half-and-half
1 cup low fat vanilla frozen yogurt
Wash and pat dry raspberries, blackberries and blueberries. Wash, pat dry and slice strawberries. Divide into four bowls. Pour fat free half-and-half over each bowl. Top with one quarter cup of frozen yogurt each. Serve immediately.
Low Fat Tropical Delight
Ingredients You Will Need:
½ cup fresh mango
½ cup fresh pineapple
½ cup fresh strawberries
1 tablespoon fresh mint
½ cup sparkling cider
1 cup low fat or fat-free mango sherbet or ice cream
¼ cup shredded coconut
Wash, peel and slice mango into bite-sized pieces. Slice fresh pineapple into bite-sized pieces. Wash, pat dry and slice strawberries into bite-sized pieces. Muddle fresh mint in half cup of sparkling cider; pour over fruit. Divide fruit into parfait glasses. Top with one quarter cup of sherbet or ice cream in each parfait. Top with shredded coconut. Serve immediately.
Low fat Cranberry Cherry Meringues
Ingredients You Will Need:
4 egg whites, room temperature
¼ cup dried cherries, minced
¼ cup dried cranberries, minced
½ cup warm water
2 teaspoons fresh lemon juice
4 teaspoons honey
Crack eggs; let egg whites stand until room temperature.
Combine minced dried fruit in a shallow bowl, and cover with warm water. After 20 minutes, drain dried fruit and pat dry.
Preheat oven to 275 degrees Fahrenheit.
In a large mixing bowl, beat egg whites with an electric mixer on high speed for two minutes. Reduce speed to medium. Add lemon juice and honey little by little while still beating on medium speed until the meringue mixture forms stiff peaks. Carefully fold in the dried fruit, mixing as little as possible.
On a baking sheet, place a piece of parchment paper. Spray nonstick cooking oil on the parchment paper. Drop the meringues onto the oiled parchment paper by tablespoons. Bake until just browned, about 20 minutes. Once meringues are browned, turn off oven, and let meringues set in oven for 60 minutes before removing and serving.
