Delicious Low Fat Muffin Recipes

To avoid putting on weight, you'll want to bake using low fat muffin recipes instead of taking risks with bakery muffins. While they can be a healthy menu item, most muffins, especially those monster-sized ones in most restaurants or bakeries, are loaded with remarkable amounts of fat, sugar and calories. Make your own muffins so you can control the portion size, the content and your calorie intake.

High-Fiber Low Fat Carrot Muffin Recipe
Ingredients You Will Need:
¾ cup all-purpose flour
¾ cup whole wheat flour
¼ cup oat bran
2 teaspoons baking powder
¾ teaspoon cinnamon
¼ teaspoons allspice
2 egg whites
¾ cup orange juice
2 tablespoons cooking oil
2 tablespoons honey
1 cup shredded carrots
¼ cup ground flax seed
¼ cup shredded coconut

Preheat oven to 400 degrees.

Spray muffin tins with non-stick cooking spray.

Combine dry ingredients (reserving carrots, flax seed and coconut) in a large mixing bowl. Beat egg whites in a separate bowl until foamy. Add orange juice, cooking oil and honey to egg whites, and beat until combined. Add wet and dry ingredients; stir until combined. Add carrots, flax seed and coconut; stir again.

Fill muffin tins to two-thirds full. Bake in oven for 20 minutes or until instrument inserted in center of muffins comes out clean. Serve warm.

Low Fat Bran Muffin Recipe
Ingredients You Will Need:
1 tablespoon dried apricots
1 tablespoon dried cranberries
1 tablespoon dried cherries
1 tablespoon raisins
1 cup skim milk
1 egg white
2 tablespoons cooking oil
3 tablespoons honey
1 cup whole wheat flour
½ cup all-purpose flour
2 teaspoons baking powder
¼ cup bran cereal flakes, any brand

Preheat oven to 400 degrees.

Combine dried fruit, milk, beaten egg white, oil and honey. Mix thoroughly. In a separate bowl, combine dry ingredients except cereal flakes. Combine wet and dry ingredients; mix until combined. Stir in cereal flakes.

Spray muffin tins with nonstick cooking oil. Fill muffin tins two-thirds of the way full. Bake for about 20 minutes or until instrument inserted in center of muffins comes out clean. Serve bran muffins while still warm.
