If you and your spouse find it challenging to do low fat recipes for two, start by considering the foods you love. Don't deny yourself too much, or you will stray. Whenever possible, incorporate your favorite foods into your low-fat diet.

Recipes for two are easy when both partners are united in working toward healthy diets or low-fat diets. Again, keep in mind the foods you like, and squeeze them in. Even if your favorite dish has a lot of fat, allow for it from time to time so you don't feel deprived.

Gazpacho Soup
Ingredients You Will Need:
2 cups tomato juice, low-sodium
1 14-ounce can beef broth, fat free with low sodium
1 ¼ cup carrots, shredded
1 ¼ cup celery, diced
2 cloves garlic, minced
1 ½ cups cucumbers, peeled and diced
1 cup green pepper, diced
6 green onions, sliced
¼ cup fresh parsley, chopped
1 can tomato with herb soup, low-sodium
2 teaspoons Worcestershire sauce, low-sodium
1 tablespoon lime juice
Fat-free sour cream
Cilantro, chopped

Use a large bowl to combine all ingredients. Stir so that the ingredients are well blended, and then chill the soup for at least two hours. This will give the different flavors a chance to mesh with one another. Garnish with sour cream and cilantro. This recipe provides approximately five 80-calorie servings.

Vegetables with Spinach Fettuccine
Ingredients You Will Need:
6 sun-dried tomatoes
3 ounces uncooked spinach fettuccine
1 tablespoon olive oil
2 tablespoons onion, minced
2 tablespoons red bell pepper, sliced
1 clove garlic, minced
½ cup white mushrooms, sliced
¾ cup fresh spinach, chopped
Pinch of nutmeg
Pinch of pepper
Pinch of sea salt

Put the tomatoes into a large bowl, and cover them with boiling water. Let the tomatoes sit for about 10 minutes or until tender. Cook the fettuccine according to the package directions. While the noodles are cooking, drain the tomatoes, and then cut them into strips. Set the tomatoes aside.

Heat the oil in a large pan. Add onion, pepper and garlic, and cook until the vegetables are tender but still firm. Add the mushrooms, spinach and tomatoes. Cook until heated through. Add the fettuccine and seasonings, and stir until well coated. Serve immediately.

This fettuccine recipe makes six servings, which is the perfect quantity when making low-fat recipes for two. That's just enough for two people to have second helpings and still have enough for tomorrow's lunch. With only 82 calories and three grams of fat per serving, this recipe is a winner.
