Spicy Dried Fruit Compote

What a way to get your vitamins and minerals! You can stir this fruit compote into yogurt or hot cereal, eat it on its own or serve over sorbet.

Ingredients You Will Need:
1 cup dried plums (prunes)
½ cup dried mixed fruit
2 tablespoons sugar
¼ teaspoon ground allspice
1 teaspoon ground cinnamon
½ teaspoon ground ginger
2 cups water
 
In a 1-quart microwave safe bowl, combine all ingredients and stir to mix. Cover and vent. Microwave on high for three minutes or until boiling. Remove from microwave and allow to cool for at least 30 minutes before serving.

Serves six.
