Chicken Soup in the Crockpot

Ingredients you will need:

1 1/2 pounds of boneless chicken breasts

1 large can of chicken broth

3 stalks of celery

1 large onion

1 large carrot

2  large potatoes

Slice chicken into chunky pieces about 3/4 inch slices, chop celery onion, carrots and potatoes. Place everything into crock pot pour in broth and mix. You can also add salt and pepper to enhance flavor. Put crock pot on low heat to cook for eight hours and high heat for four hours. Stir occasionally throughout the day. You can serve chicken soup over egg noodles and sprinkle Parmesan cheese over the top.

You can use a whole chicken instead of boneless breasts; however, before it is time to eat you need to remove all the bones. Sometimes the chicken bones help add flavor to the broth. This can be a messy job, and you want to make sure you remove all the bones. Instead of using chicken broth, you could use bullion cubes with water. The package will say how many cubes to use to how much water you have. You can also add other vegetables, such as green beans and corn, or anything your family has acquired a taste for. Some people may even choose to leave out the potatoes. The potatoes just make the meal a little more filling, but if you are going to serve the soup over noodles you can pass on them.
