2 large, boneless, skinless chicken breasts
2 teaspoons extra virgin olive oil
2 teaspoons lemon juice
1 teaspoon ground black pepper
½ teaspoon finely grated lemon zest
¼ teaspoon salt
Preheat oven to 375 degrees. Place cleaned chicken breasts in a small baking dish. Whisk together the oil, lemon juice, pepper, lemon zest and salt in a small bowl. Brush chicken breasts with mixture. Place chicken in oven, and bake for 20 minutes, or until the juices run clear and a meat thermometer reads 180 degrees. Remove from oven, let cool a few minutes and serve.
Teriyaki Chicken and Veggies Stir Fry Recipe
Ingredients You Will Need:
2 tablespoons extra virgin olive oil, divided
½ teaspoon minced garlic
2 large, boneless, skinless, chicken breasts, sliced
3 tablespoons teriyaki sauce
1 tablespoon rice vinegar
½ cup diced zucchini
½ cup diced carrots
�" cup chopped bok choy
¼ cup sliced water chestnuts
¼ cup chopped mushrooms
Pour one tablespoon of oil and garlic into a large skillet or wok over medium heat. When oil is hot, add chicken slices. Cook for three to four minutes on each side. Remove chicken from pan, place in small bowl and set aside.
Pour one tablespoon of oil into the skillet or wok, and let it heat up. Add the teriyaki sauce, rice vinegar, zucchini and carrots to the skillet. Stir fry for two minutes. Add bok choy, water chestnuts and mushrooms to skillet. Stir fry until veggies start to turn tender, about three minutes. Add chicken to skillet, and stir fry everything for two minutes. Remove skillet from oven, and serve over rice.
Light Apple Dijon Chicken Salad Recipe
Ingredients You Will Need:
2 tablespoons unsweetened apple sauce
1 tablespoon Dijon mustard
1 tablespoon low-fat sour cream
2 teaspoons apple cider vinegar
2 teaspoons water
¼ teaspoon ground black pepper
1 6-ounce can cooked chicken breast in water, drained
¼ cup shredded Romaine lettuce
¼ cup chopped carrots
¼ cup peeled, sliced cucumbers
¼ cup baby spinach leaves (about 20 leaves)
¼ cup diced tomatoes
Stir together apple sauce, mustard, sour cream, vinegar, water and pepper in a small bowl. Mix well. Add chicken to bowl, and mix well. Place lettuce, carrots, cucumbers, spinach and tomato in a medium mixing bowl. Pour chicken mixture over salad. Toss salad together, covering everything in the chicken mixture. Garnish with a few thin slices of apple, and serve.
