Crockpot Potato Soup Recipe
Ingredients You Will Need
8 potatoes, cubed
3 chicken bouillon cubes
6 cups water
Pinch dry parsley flakes
1 cup onion, chopped
2 tablespoons butter (or margarine)
2 cups milk
½ cup flour (mixed with water)
Salt and pepper to taste
Put the potatoes, bouillon cubes, water, parsley, onion and butter into the crock-pot, and let cook overnight on low to medium. Then, about a half an hour before you wish to serve the soup, mix together the milk and flour, add it to the soup and stir well. Let the soup cook for another half hour before serving.
Variations
If you want to add a few more flavors to the soup, try adding four cloves of minced garlic, one cup of sour cream, two tablespoons of dried snipped chives and ⅛ teaspoon of celery salt. Add these ingredients to the crockpot before adding the milk at the end. You can also substitute evaporated milk for the real thing. Some recipes also use cream cheese instead of the sour cream, but it's up to you how you like your soup.
You can also add in some bits of bacon for a potato-and-bacon version of the soup. Or, you could add about a ¼ pound of Velveeta or shredded cheddar cheese when you first mix the ingredients in the crockpot.
