Making Crock Pot Roast Beef

Before you try crockpot roast beef, make sure you know your crock pot and what it can handle. A good crockpot roast beef recipe allows you to cook the meat on low for more than six hours.

No matter how old your crockpot is, you need to prepare it to handle a browned roast. To prepare a crock pot, pour one-fourth to one-half cup of warm water into the slow cooker, and then turn the setting to low. After about fifteen minutes, turn it up to high, and then, after it has heated up some, add the hot meat, and adjust the temperature to suit the recipe.

Roast Beef and Sour Cream
Ingredients You Will Need:
1 3-pound roast
4 cloves garlic
4 slices bacon
½ cup warm water
2 large onions, cut into rings
1 tablespoon Worcestershire sauce
1 bay leaf
Salt and pepper to taste
3 tablespoons white flour
1 cup sour cream
1 tablespoon fresh parsley

Trim excess fat from roast; make several cuts about one-half-inch deep on each side of the roast. Make four slits in the top of the roast and insert cloves of garlic. Fry bacon until crumbly. Drain and reserve the drippings. Place bacon in the refrigerator until hardened; crumble and set aside.

Brown the roast in the leftover bacon grease. Sear it on all sides. Place the roast into a prepared crock pot, making sure there is one half cup of warm water in the pot before adding the meat. Add the onion, Worcestershire sauce, bay leaf and salt and pepper to the water. Cook for four or five hours on the high setting. Remove the bay leaf, and turn the heat off.

Cook the pasta according to box directions. Drain and set aside in a covered bowl. (Keep the pasta warm while you make the sour cream sauce.)

Skim the fat from the crockpot. Place the fat into a skillet, and add enough additional grease to make three tablespoons. Add the flour and brown, but do not burn. Add the sour cream to the mix, and stir over low heat until smooth. Ladle the sauce over the pasta. Skim the onions from the crockpot, and serve them over the pasta and the sour cream sauce. Sprinkle the crumbled bacon over the top of the onions, and top off with fresh parsley.
