Two Bean Bake Vegan Crockpot Recipe
Ingredients You Will Need:
1 16-ounce can great northern white beans, drained and rinsed
1 16-ounce can black beans, drained and rinsed
½ cup diced carrots
½ cup diced mushrooms
¼ cup diced green onions
1 cup low-sodium vegetable stock
1 14-ounce can diced tomatoes, half drained
2 teaspoons garlic paste
1 teaspoon fresh, minced basil
½ teaspoon fresh, minced thyme
½ teaspoon cumin
¼ teaspoon ground white pepper
? teaspoon dried oregano
Add white beans, black beans, carrots, mushrooms and green onions to a large crockpot, at least 3 quarts in size. In a medium bowl, stir together the vegetable stock, tomatoes, garlic, basil, thyme, cumin, pepper and oregano. Pour mixture into crockpot, and mix well. Cover crockpot with lid, and turn heat to low. Cook for 6 hours. Remove lid from crockpot, stir and serve.
Lemon Herb Chicken Crockpot Recipe
Ingredients You Will Need:
?" cup lemon juice
?" cup low-sodium chicken broth
1 teaspoon ground black pepper
1 teaspoon fresh, minced rosemary
1 teaspoon lemon zest
½ teaspoon minced garlic
½ teaspoon fresh, minced parsley
½ teaspoon fresh, minced chives
4 medium, skinless, boneless chicken breasts, equaling 24 to 26 ounces
Stir together the lemon juice, broth, pepper, rosemary, zest, garlic, parsley and chives in a small bowl. Place chicken in a medium crockpot, at least 2 quarts in size, and pour mixture over top. Cover crockpot with lid, and turn heat to low. Cook for 8 hours. Remove lid from crockpot, and serve.
Light Chicken and Broccoli Bake Crockpot Recipe
Ingredients You Will Need:
2 medium, skinless, boneless chicken breasts, equaling 12 ounces, cubed
2 cups broccoli florets
1 cup cauliflower florets
¼ cup chopped green onions
?" cup low-sodium chicken broth
1 tablespoon extra virgin olive oil
2 teaspoons lemon juice
1 teaspoon fresh, minced dill
½ teaspoon ground white pepper
½ teaspoon sweet paprika
Place chicken, broccoli and cauliflower in a medium crockpot, at least 2 qt size. In a small bowl, stir together onion, broth, oil, juice, dill, pepper and paprika. Pour mixture into crockpot. Mix lightly. Cover crockpot with lid, and turn heat to low. Cook for 8 hours. Remove lid from crockpot, stir and serve.
